Observed diced tomatoes at grill prep line at 51*F. Cold hold of food to be 41*F or lower. As per grill cook, tomatoes were diced in the morning and added to prep table. Advised staff to chill diced tomatoes in walk in cooler or bottom of prep table prior to adding to top section. Tomatoes were discarded by grill cook.
