PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding. Observed seasoned potatoes in cooling drawer beneath grill for pancakes/ French toast and hash browns at 45*F. Cold hold of food to be 41*F or lower. As per the kitchen grill line cook, equipment was pulled away from wall to clean in morning and plug may have been pulled out Staff replaced plug and unit temperature began to drop. Potatoes were placed in walk in cooler to cool and will be placed in cooling drawers once unit reaches 41*F. Advised staff to monitor cold hold temperatures with metal stem thermometers to ensure food is remaining at 41*F.

A pattern of non-compliance is developing for Priority violation # [20 ], [3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding] which has been noted during this inspection. An Active Managerial Control Intervention Visit was offered to the person in charge. Failure to correct repeat violations may result in legal action. No County legal action will result from this inspection. Verbally discussed Notice of Inspection Rights with Maria N. Emailed copy of inspection report to facility. Emailed copy of 72 hour notice with inspection.
