For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4576/AMC-Toolbox---Cold-Holding. - Reach-in cooler near fryers found with cooked chicken, hot dogs, cooked green chili, and liquid egg with internal temperatures of 57-60*F, verified with PIC's calibrated probe thermometer and inspector's probe thermometer. The cooler was last checked at 11:00 AM and was at 36*F. PIC moved the food items to the walk-in for cooling and continued cold holding. Cold brew coffee concentration that requires cold holding once opened found on counter near computer desk with internal temperature of 84*F. PIC discarded the coffee concentrate. Cold brew coffee in lower portion of toppings cooler found with internal temperature of 54*F. PIC stated they were also below 41*F at 11:00 AM and moved them to the walk-in for cooling and continued cold holding. The coolers may have a hard time cold holding right now due to the A/C being out in the building. The toppings prep cooler and the reach-in cooler near the fryers will not be used to cold hold TCS food items until they are repaired/replaced and able to maintain an ambient temperature of 41*F or below. Please ensure cold held TCS food items are maintained at 41*F or below.
