For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4576/AMC-Toolbox---Cold-Holding. - Shredded cheese in ice bath container found with internal temperature of 58-62*F; temperatures verified with inspector's and PIC's probe thermometers. Both thermometers were calibrated during inspection. PIC stated the cheese was placed out at 8:00 AM today. PIC discarded the cheese. No ice was found to be in the ice bath container, as it was all melted. Inspector advised keeping the cheese in the prep cooler nearby. Please ensure cold held TCS food items are maintained at 41*F or below.

For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4574/AMC-Toolbox---Food-Contact-Surfaces. - Tomato slicer attached to prep table near 3 compartment sink found with food debris on it's surfaces. PIC stated the slicer was cleaned earlier today but the employee cleaning it must have missed some spots. The slicer appears to have have had a screw replaced that requires tools to be removed. Slicer use will be discontinued until it is properly repaired or replaced. Please ensure equipment is maintained in good repair and continues to be easily cleanable.

Core-6-201.11, C: Floors, Walls and Ceilings-Cleanability - caulking at 3 compartment sink, especially to the West side of the sink, is in disrepair and requires resurfacing. Hand wash station nearest the front of the kitchen is also beginning to show signs of wear and tear and could use resurfacing as well. Please resurface these areas prior to next routine inspection.
