PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding. For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4576/AMC-Toolbox---Cold-Holding. - Sliced tomato and sliced cheese in prep top cooler found with internal temperatures of 50-51*F, verified with inspector's and PIC's calibrated probe thermometers. PIC stated the cooler was last found to be at proper cold holding temperature at 10:00 AM. PIC discarded the tomato and cheese. Other TCS food items were found to be at 41*F or below in the cooler. The ambient temperature of the cooler was about 43*F. PIC stated the cooler was opened frequently during the lunch-rush. PIC will continue to monitor the cooler and ensure the ambient temperature returns to 41*F or below and is able to maintain that temperature to cold hold food items at 41*F or below. There is a lot of heat coming off the nearby expo station which may have caused the tomato and and cheese to come out of cold holding temperatures. Please ensure cold held TCS food items are maintained at 41*F or below.

Also discussed cleaning methods for soda nozzles.
