Thermometer was calibrated on site. Per person in charge (PIC), the cheese had been in the unit since the day before. These items were voluntarily discarded at time of inspection. Ambient air temperature measured 46°F. A work order for the unit was placed at time of inspection. Establishment has adequate refrigeration to maintain operations. Reviewed cold holding and equipment requirements with PIC to ensure foods are kept at or below 41°F.

Priority Foundation-8-103.12 (B), Pf: Conformance with Approved Procedures; HACCP records --No cleaning/sanitizing logs were on site/accessible for F'real milk shake machine at time of inspection. Reviewed variance and cleaning requirements with person in charge. Variance requirements are as follows: -Logs must be maintained that verify that the f?REAL blender undergoes automatic cleaning and sanitization using the submitted and approved process once every 24hrs and a manual cleaning and sanitizing using the submitted and approved process once every 7 days. -The device will undergo descaling to remove hard water deposit buildup inside the blender as needed to ensure device is clean to sight and touch. -High Temperature sanitization will be verified weekly by heat sensitive indicators, which will be maintained with the weekly logs. -These logs must be retained on premises for at least 180 days. -The facility provides records upon request to the Maricopa County Environmental Services Department ("Department") or its representatives pursuant to §8-103.12(B).
