For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4576/AMC-Toolbox---Cold-Holding. --Burgers, burritos, and various other sandwiches measured internal temperatures between 50°F-52°F in the open refrigerator across from the hot dogs. Thermometer was calibrated on site. Per person in charge, these items were placed in the unit last night and were voluntarily discarded. Ambient air temperature measured 49°F per min/max thermometer. A work order was placed for the unit. There is adequate alternative refrigeration on site. Reviewed cold holding requirements and PIC duties to ensure food items are kept at or below 41°F.

This establishment is not participating in the award program at this time and had 1 Priority, 0 Priority Foundation and 0 Core Violations on this inspection. No County legal action will result from this inspection. Inspection report emailed. F'Real machine was not working at time of inspection. The person in charge (PIC) has a work order in to have it repaired. A pattern of non-compliance for Priority violation # [20], [3-501.16] has been noted during this inspection. The person in charge declined the opportunity to attend the Department’s Active Managerial Control Class.
