PRIORITY VIOLATION-4-501.114, P: Manual and Mechanical Warewashing Equipment, Chemical Sanitization- Temperature, pH, Concentration and Hardness. At in-use, automatic bar dishwasher, observed a chlorine sanitizer concentration of 0ppm at food contact surfaces when measured with inspector and establishment test strips. Chlorine shall be between 50-100ppm for proper sanitization. Empty container of sanitizer was replaced, machine was primed and a chlorine concentration of 100ppm was achieved. Discussed, with Person in Charge, importance of proper sanitization of food contact surfaces and monitoring sanitizer concentrations. This establishment received a(n) B Grade and had 1 Priority, 0 Priority Foundation and 1 Core violations on this inspection. Core-2-102.12(A), C: Certified Food Protection Manager >>> Per Person in Charge (PIC), no Certified Food Protection Manager (CFPM) at establishment during time of inspection. Per paragraphs 2-102.12(A) and 2-102.20(B) the Person in Charge shall be the Certified Food Protection Manager and per paragraph 2-101.11, a Person in Charge must be present during all hours of operation. Per PIC, members of staff are signed up to take the CFPM exam. Please obtain necessary certificate(s) and maintain at establishment prior to next routine inspection. Also inspected refrigerated truck with frozen food storage. No County legal action will result from this inspection. Inspection Report emailed and confirmed received.
