PRIORITY VIOLATION-3-501.16(A)(1), P: Time/Temperature Control for Safety Food, Hot Holding-Rice in warmer was 110°F. Per person in charge the rice had been made 1 hour ago. the warmer was unplugged so the person in charge plugged the warmer back in to bring the rice back up to 165°F. Discussed hot holding policy and procedure.

PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding-Sushi in drink cooler by cash register had internal temperature of 52°F. Cooler had ambient temperature of 60°F. Per person in charge the drink cooler is unplugged during the night and when it is plugged in at the beginning of the day the sushi is placed in it from the walk in cooler. Person in charge moved sushi, which had been in cooler for 1 hour, to another cooler with lids off for rapid cooling. Employees will not put sushi in unit until it is equal or colder than 41°F. Discussed cold holding policy and procedure.

PRIORITY VIOLATION-5-202.14, P: Backflow Prevention Device, Design Standard-Hose with spray nozzle attached to faucet. Explained that the spray nozzle must be unhooked after each use because allowing for the risk of constant pressure to damage the backflow prevention device is prohibited. Person in charge detached the spray nozzle.
