Personal drinks are to be kept in an assigned break area and not on or near food prep locations. Drinks were removed from area.

Observed sliced tomatoes and cut leafy greens at 45*F and Sliced ham at 45*F in small sandwich prep refrigerator. As per the person in charge items were placed in top portion above cold hold area to assist with sandwich making. Person in charge placed items back in the bottom of refrigerator to cool to 41*F. Second temperature was checked and items had cooled to 42*F.

Observed kolachies in display case for sale with no discard times documents. As per the person in charge, Kolachies were prepared in am at 7:30 am. Discard time is to be within 4 hours of removing product from a heat source. Kolachies must be documented and removed with an 11:30 am discard time. Operator removed items by 11:30 am.

A Certified Food Protection manager must be on site during hours of operation. Correct prior to next routine inspection - Core Violation. Verbally discussed Notice of Inspection Rights with Sophealtra N . Emailed copy of inspection report to facility. Emailed copy of 72 hour notice with inspection.
