Cheese and various meat filled croissants in display case without time stamp for using time as a control. PIC stated that the filled croissants were made at 7am and placed time stamp for discard at 11am. When using time as a control, the food has to be marked or otherwise identified to indicate the time that is 4 hours past the point the TCS food was removed from temperature.
