This visit was conducted as a result of a communicable disease report and inspection request from the Maricopa County Department of Public Health.
Shellstock records were found to be out of compliance. Tags were found to be missing the written dates when the establishment sold the last shellstock from that specific tag. Discussed and reviewed shellstock records and regulations related to shellstock tags (shellstock tags must be kept with the shellstock until last shellstock is sold, removed and stored on-site for 90 days, stored in chronological order and with the date of the last product sold written on each tag).

Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced
food safety program and ongoing demonstration of active managerial control. Verification Visit inspections found in compliance
with Cutting Edge program requirements receive an “A” grade.
