Observed dust and flour residue on vents on the side of establishment that processes chicken to cook. Observed dust near vents on the opposite side where sides are prepped and made per order/sandwich area and above the monitor under the menu. Manager stated they are in the process of cleaning and will clean in phases when lobby is closed in the coming weeks. Discussed with manager that nonfood-contact surfaces of equipment shall be cleaned at a frequency necessary to preclude accumulation of soil residues.
