For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4616/25575/AMC-Toolbox---Cooking. - Hamburger began cooking from raw on flat grill found with internal temperature of 138-148*F after being removed from the grill for service. PIC had the burger discarded and prepared another one. The wrong timer was pressed for the burger and should have been cooked for about 1 minute longer which is likely why it was undercooked. The next burger was over 170*F. Temperatures were verified with PIC's and inspector's probe thermometers. Please ensure raw animal foods are fully cooked for service (17 seconds at 155*F internal temperature for hamburgers)
