Large pan of uncut, baked lasagna found in walk-in cooler at an internal temperature of 50*F. When cooling, ensure that the food starting from 135°F reaches 70°F within 2 hours and reaches 41°F or less in 4 hours (for a total of 6 hours from the time it is 135°F to 41°F or less. Per PIC, lasagna was cooked yesterday, with no documentation of the cooling process. Lasagna was embargoed due to improper cooling. ------------- PIC removed lasagna from walk-in cooler and discarded. Properly monitor internal food temperatures and times when cooling of TCS foods.

Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control.
