Raw animal foods shall be separated from each other during storage, preparation, holding and display by using separate equipment for each type, arranging each type of food in equipment so that cross contamination is prevented. Discussed importance of proper food storage to prevent cross contamination with Person in Charge. Raw chicken was moved for proper storage. A ready to eat, TCS (time/temperature controlled for safety) food shall be discarded if it exceeds the 7 days at 41?F, except time it is frozen. Discussed importance of date mark disposition with Person in Charge. Cheese sauce and pizza sauce were discarded at time of inspection (see embargo form). e.g.- Hand washing soap and paper towels not available at hand wash sink (may lead directly to food employees not properly washing hands when required)
Core violation is a minor violation that relates to general maintenance and sanitation.
e.g. -No sign reminding employees to wash hands
Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control. Verification Visit inspections found in compliance with Cutting Edge program requirements receive an “A” grade.
