Observed a container of chopped ham and a container cooked sausage in pizza prep refrigerator without any date marking labels. Person in charge (PIC) stated the containers of ham and sausage were opened within the last day or two. Advised PIC that ready to eat (RTE), time/temperature control for safety (TCS) foods held longer than 24 hours must be properly labeled with a date to ensure food items are not held longer than 7 days. Employee placed date marking labels on containers and PIC stated they will ensure RTE/TCS foods are properly labeled.

This establishment received a(n) B Grade and had 0 Priority, 1 Priority Foundation and 0 Core violations on this inspection. Inspection rights verbally reviewed with person in charge, Vino B. Timer on pizza prep rack was not operating properly. Timer would not consistently turn on when employee would try and set timer for newly prepped pizzas. Recommend obtaining a back up timer for pizza racks, or mark newly prepped pizzas with prep time in case rack timers are not operating properly, to ensure pizzas are not held at room temperature for longer than 4 hours. Discussed ensuring cleaning bottles are not stored above food prep areas to prevent accidental contamination of foods. No County legal action will result from this inspection.
