TCS food items, such as ham, sausage, and cheese sticks, in the cooler were found with internal temperatures between 43-48*F. PIC discarded the TCS food items listed on the embargo form and moved the others, which were in the cooler less than 2 hours, to the walk-in cooler for continued cold holding. The lower portion of the prep cooler will not be used for cold holding TCS food items until it is able to maintain an ambient temperature of 41*F or below. Upper portion of the prep cooler is holding below 41*F and may continue to be used normally. Please ensure cold held TCS food items are maintained below 41*F or below.

PIC moved the chemicals to another location where they were not above food contact equipment or food items. Please ensure chemicals are stored properly in areas to prevent possible contamination of food items or food contact equipment.
