Observed Tofu products (53*F) and Chicken products (53*F), sweet potatoes (53*F) at prep counter with proteins greater than 41*F. Cold hold of food to be 41*F or lower. Person in charge discarded items. as per staff, items were checked earlier in the morning and were holding at 41*F or lower. Person in charge also stated that he was not notified that the prep station was not holding at a higher temperature of 41*F. Items were discarded.

Observed that the prep counter refrigerator holding proteins had an ambient temperature of 53*F. Cold hold refrigeration units must be set at a temperature which holds cold food at 41*F or lower. Items were removed from bottom of cold hold unit, ice was added to assist in chilling interior to assist with keeping cold food cold. Person in charge with monitor temperatures and use time as control until maintenance arrives to fix unit. Work order was submitted during inspection.
