Observed cooked chicken 54-106*F in covered stacked containers in walk in. Per Person In Charge (PIC) item is still within time/temperature parameters. Items must be loosely covered or uncovered to facilitate rapid cooling. Per PIC items are usually cooled uncovered in freezer, items were uncovered and moved and PIC will ensure time/temperature parameters and proper cooling methods are followed. Discussed food flow procedures.
