PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding. For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4576/AMC-Toolbox---Cold-Holding. -Observed small bottles of milk with internal temperatures of 46°F in mini fridge next to the soda dispensing machine. Ambient air temperature of the unit measured at 46°F with min/max thermometer. Person in charge (PIC) stated the bottles of milk were left overnight in the fridge. Milk was removed from the fridge and discarded at time of inspection. Discussed proper cold holding procedures with PIC and adding this fridge to their daily temperature checks. Establishment will not use fridge until maintenance is performed to keep TCS foods at 41°F or below. Establishment has sufficient capacities for cold holding of TCS foods while they wait for maintenance.
