Advised person in charge (PIC) that raw animal foods shall not be stored over ready to eat (RTE) foods to prevent contamination of RTE foods. PIC relocated the pans of raw beef to the bottom of refrigerator shelves.

Person in charge (PIC) stated the deli slicer was last used the day before. Advised PIC that dishware and utensils, which are used to process time/temperature control for safety (TCS) foods, must be cleaned to sight and touch to prevent contamination of foods. PIC moved the deli slicer parts to the dishwashing area to be washed, rinsed, and sanitized.

Advised person in charge (PIC) that a written policy or procedure must be readily available for any animal foods that are not immediately cooked to minimum safe temperatures. Developed non-continuous cooking policy with PIC.
