For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4617/AMC-Toolbox---Cooling. ----- Cooked sausage observed with an internal temperature range of 70-75*F inside the walk-in cooler. Per person in charge, the sausage was cooked in the morning and placed in walk-in cooler to cool. More than 3.5 hrs had elapsed since sausage was placed in walk-in cooler. It was determined that the sausage did not cool properly because the container was over filled, tightly sealed with saran wrap, and stored in one of the lower racks of the speed rack. Discussed importance of air circulation during the cooling process. TCS foods must be cooled from 135*F to 70*F in 2 hours, then further cooled to 41*F in 4 hours. PIC volantarily discarded the sausage at time of inspection. An embargo form was filled and has been uploaded.
