Observed uncooked sausage in walk in cooler ay 45*F. Cold hold of temperature control for safety foods must be held at 41*F or lower. As per the person in charge, the walk in cooler is working in the mornings, but this morning there was a lot of ice around the fans and it had finally begun to melt. Sausage was portioned out for sales today. Sausage was placed into freezer until it can be portioned and placed in display cold case.

Observed walk in cooler holding at 50*F. Cold holding equipment such as walk in coolers must have a consistent temperature that will keep foods at 41*F or lower. As per the person in charge, staff were in and out of the walk in cooler doing prep or the morning and there was ice built up around the fans. After 30 minutes the fans did show 41*F (Infrared Thermometer) for a few minutes and then went back to 50*F. Ambient temperature for unit remained at 50*F. Person in charge contacted repair company and they will be on site by 7/28/2022. Re-inspection to be completed no later than 7/29/2022. All temperature for safety foods (Raw Meats) were placed in freezer. Remaining foods such as produce, tortillas and gelatin may remain in walk in cooler. No foods may be cooled within walk in cooler until repaired.

Observed Gatorade bottle stored within ice machine for ice used for meat department. Ice that may come in contact with food surfaces may not be used as a coolent for personal items. Gatorade and ice were removed from ice machine.

No County legal action will result from this inspection. Verbally discussed Notice of Inspection Rights with Sebastian H. Emailed copy of inspection report to facility. Emailed copy of 72 hour notice with inspection. 2-102.12.(A) Certified Food Protection Manager. During site visit no staff on site with a Certifies Food Protection Manager certificate. As of February 2022, all establishments must have a Certified Food Protection Manager on site during normal hours of operation. Core Violation - Correct Prior to Next Inspection.
