Observed green salsa in walk in cooler date marked 6/27 at 50*F. As per the person in charge, salsa was prepared and cooled on 6/27 and in the walk in cooler for more than 8 hours. Cold hold of food to be at 41*F or lower. Salsa was discarded by person in charge. Advised the person in charge to take temperatures of foods in the walk in cooler and not to only review the internal temperature of walk in cooler.

No County legal action will result from this inspection. Verbally discussed Notice of Inspection Rights with Javier G. Emailed copy of inspection report to facility. Emailed copy of 72 hour notice with inspection. Provided sample cooling charts in Spanish to assist with cooling of salsas. Discussed the need to have a Certified Food Protection Manager on site during hours of operation.
