Refrigerated open air unit ambient temperature 63*F holding Time/Temperature Control for Safety (TCS) foods (pudding, boiled eggs, cheeses, cookie dough, wraps (meat and cheese), sandwiches (meat and cheese), tamales and lunchables (meat and cheese)) with internal temperature measured to be 55-76*F. Per person in charge these items have been in unit at least overnight (more than four hours). Per person in charge unit temperature was checked by reading gauge (reading in the 20*F range during inspection) but not verified by probe thermometer. Person in charge will call for repair and removed TCS items to voluntarily discard. See embargo. Establishment has adequate alternate coolers holding proper temperature at time of inspection, do not use this unit to hold TCS foods until it has been repaired to hold 41*F or below.
