For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4573/AMC-Toolbox---Handwashing. ----- Observed an employee with gloved hands wiping down the sandwich make-line with a sanitizer cloth, handled frozen but raw hamburger meat, then went to grab hamburger wrapping paper to start preparing a sandwich. The employee was asked to remove gloves, wash hands and put on new gloves before making a sandwich. Employee was observed properly washing hands and put on a new pair of gloves. Discussed examples of when to wash hands with PIC. Food employees must wash their hands after any activity which may result in contamination of the hands. Switching gloves only is not sufficient.

Core-4-901.11, C: Equipment and Utensils, Air-Drying Required ------ Observed multiple containers stacked while wet on the clean dish rack located by the 3 compartment sink. Please ensure that containers and other dishes are fully dry before stacking and putting them away. PIC untacked container to allow air drying. Stacking wet items such as pans prevents them from drying and may allow an environment where microorganisms can begin to grow

A pattern of non-compliance is developing for Priority violation # [6], [2-301.14], which has been noted during this inspection. An Active Managerial Control Intervention Visit was offered to the person in charge. Failure to correct repeat violations may result in legal action.
