Priority Foundation-5-205.11, Pf: Using a Handwashing Sink-Operation and Maintenance. For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4573/AMC-Toolbox---Handwashing. --Observed the handwashing sink next to the ware washing station blocked. The handwashing sink was being used as storage for laundry and cleaning items, as well as being blocked in the front. Sink was empited and cleared at the time of inspection. Discussed need to keep the sink clear at all times along with public health risks with the Person in Charge (PIC). Ensure all handwashing sink basins and surrounding area remain completely free of objects so the sink is always easily accessible and available for use. Handwashing sinks shall only be used for the handwashing.

Core-3-304.12 , C: In-Use Utensils, Between-Use Storage --Observed scoops for both food and ice sitting in direct contact with food and ice. Scoops were sitting in protein powder buckets with the handles submerged, and ice scoop was sitting in ice bin with handle touching ice. Gloves are not used when handling these scoops. Discussed public health risks with PIC. Ice scoop was placed on designated holder and protein powder scoops were placed in separate container at the time of inspection.

Priority Foundation-5-103.11, Pf: Capacity-Quantity and Availability --Observed no hot water available at the time of inspection due to a malfunctioning fuse box. PIC stated there is a work order in to repair this issue. Establishment is currently heating water in an electric kettle to use in ware washing sink for temporary corrective action. Ensure this violation is corrected and hot water generation and distribution systems shall be sufficient to meet the peak hot water demands throughout the food establishment before the reinspection on Tuesday, January 30th.

No County legal action will result from this inspection. Inspection report emailed and printed. A reinspection will occur on or before Tuesday, January 30th to ensure violation 48 is corrected. Discussed labeling working containers. Offered Active Managerial Control (AMC) class to help train new employees. Ensure AMC and proper food handling is enforced with new staff and shift leads when owners are not present. On July 1st, 2023, the Environmental Services Department started emailing permit card(s) and permit invoice(s) to permittees. We need a current and accurate email address on file to ensure you receive a copy of your permit card and invoice(s) upon renewal. Priority foundation violation is a minor violation that does not directly contribute to an increased risk of foodborne illness but failure to correct this violation may lead to the occurrence of a priority violation.
e.g.- Hand washing soap and paper towels not available at hand wash sink (may lead directly to food employees not properly washing hands when required)
Core violation is a minor violation that relates to general maintenance and sanitation.
e.g. -No sign reminding employees to wash hands
Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control. Verification Visit inspections found in compliance with Cutting Edge program requirements receive an “A” grade.
