Ham, lettuce, cabbage, cooked chicken, salsa, pizza sauce, shredded cheese, and bacon in walk-in refrigerator with an internal temperature ranging 44-47*F. Person in charge stated foods were 41*F within 2 hours prior to inspection. Person in charge place food items on ice bath or in freezer to bring foods to 41*F quickly.

Core-4-501.11, C: Good Repair and Proper Adjustment-Equipment Walk-in refrigerator with condensation accumulating along the length of wall on ceiling near freezer door. Ambient temperature was held at 41*F but unable to hold foods at an internal temperature at 41*F. Person in charge adjusted thermostat from 39*F to 36*F and placed a work order for unit. Ambient temperature began reducing to below 41*F.
