TCS foods (i.e. - cut peppers and salami) found in salad preparation cooler at internal food temperatures of 52*F and 50*F respectfully. Unit's internal thermometer at reading 54*F. Per food employee, foods have been in unit approximately 3 hours. Cold holding of TCS foods must be held at 41*F or below. ----------- Food employee removed TCS foods from unit and placed into a properly working refrigeration unit for rapid cooling. Do not use unit to house TCS foods until unit can maintain foods at an internal temperature of 41*F or below.
