PRIORITY VIOLATION-4-501.114, P: Manual and Mechanical Warewashing Equipment, Chemical Sanitization- Temperature, pH, Concentration and Hardness. Chlorine test strips were available and easily accessible. PIC determined that the chlorine sanitizer bottle was empty and there were air bubbles in the supply line. Person in Charge changed the sanitizer bottle and primed the dishwasher to get rid of air bubbles in the line. After priming and running the dishwasher several times, the chlorine concentration was observed between 50-100ppm after final rinse. PIC stated that all dishes that were recently washed will be rewashed to ensure proper sanitization. Ensure chlorine sanitizer is maintained at 50-100ppm.
