PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding. Various TCS foods found in 3-door True cooler in food preparation area with internal temperatures of 48*F or above. Per PIC, foods in equipment have not been monitored for internal temperatures. Cold holding of TCS foods must be held at 41*F or below. Foods found to be abused for Time and Temperature were embargoed (see embargo sheet). -------------- Embargoed foods were discarded by food employees at time of inspection. TCS foods found to be in compliance with Time and Temperature parameters were moved to walk-in cooler. Do not use 3-door True refrigeration unit to house TCS foods that require proper cold holding of foods at 41*F or below. Service call for equipment was made at time of inspection.

Two large containers of recently cooked alfredo sauce found in plastic containers with lids on inside walk-in cooler. Properly cool TCS foods using acceptable methods which include: o Placing food in shallow pans. o Separating the food into smaller or thinner portions. o Using rapid cooling equipment (i.e. a blast chiller). o Stirring the food in a container placed in an ice water bath. o Using containers that facilitate heat transfer. o Adding ice as an ingredient. o Other effective methods. ------------- PIC had food employee removed lids of containers and place containers in ice baths at time of inspection. Monitor internal food temperatures to assure Time and Temperature bench marks for cooling are met.

Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control.
