PRIORITY VIOLATION-3-501.16(A)(1), P: Time/Temperature Control for Safety Food, Hot Holding. >>> In hot holding station, next to cookline, observed black beans in a plastic container with internal temperature 118*-131*F. Except during preparation, cooking, cooling, or when time is used as a control all TCS (time/temperature controlled for safety) food to be maintained at 135°F or higher. Per employee, beans were placed in hot holding 40 minutes prior. Beans were reheated on stove to 165*F before returning to hot hold. Discussed importance of proper hot holding with Person in Charge. Priority Foundation-7-102.11, Pf: Common Name-Working Containers >>> Observed two unlabeled spray bottles, near back door of kitchen and front handwashing sink, with a blue liquid. Person in Charge (PIC) stated the spray bottles contained glass cleaner. Working containers used for storing poisonous or toxic materials such as cleaners and sanitizers taken from bulk supplies shall be clearly and individually identified with the common name of the material. Discussed ensuring all spray bottles containing cleaners, sanitizers, etc. are labeled with PIC. PIC labeled spray bottles.

A pattern of non-compliance for foodborne illness risk factor violation # [19], [3-501.16(A)(1)] has been noted during this inspection. An Active Managerial Control Intervention Plan visit was offered to the person in charge. Failure to correct repeat violations may result in legal action.
