Observed green salsa in a large round food safe container in the large reach in cooler at a temperature of 48*F that was placed in the reach in at 9:30am yesterday morning and not touched. Person in charge was informed Cooked TCS food must be cooled from 135°F to 41°F or less in 6 hrs provided that the food is cooled from 135°F to 70°F within the first 2 hours. Person in charge discarded items at time of inspection.

PRIORITY VIOLATION-7-204.11, P: Sanitizers, Criteria-Chemicals... Observed dish washer using chlorine with a concentration above 200ppm when using testing strip on surface of plate after running. Person in charge was advised to use 3 compartment sink until dish washer can stay between 50-100ppm. Person in charge moved dish washing to 3 compartment sink at time of inspection. Person in charge informed sanitizer is too high per sanitizer label requirements.
