Observed hotel pan of shredded cabbage and individual portioned containers of salsa with temperatures ranging from 57°F- 59°F in refrigerator under small prep counter behind food display case. The ambient air temp of the unit measured 57°F. PIC said the salsa was made the night before and she thought she had turned the unit down to make it colder but accidentally turned it up. Salsa and shredded cabbage were discarded. Discussed monitoring the temperature of the unit to maintain proper temperatures.
