Observed chlorine based sanitizer in 3-compartment sink with a 0ppm concentration. Per person in charge (PIC) bleach was added when sink was prepared. PIC instructed staff to add more bleach until concentration measured between 50-100ppm. Discussed having staff regularly check concentration of sanitizer to ensure a proper concentration of 50-100ppm.

Observed container of soup and cooked pork with date marks of 3/20 and 3/18 in walk-in cooler. PIC had kitchen staff discard items. Discussed having morning shift staff conduct a quick check of date marks to ensure items are not held past seven days.

Core-2-102.12(A), C: Certified Food Protection Manager --Establishment did not have a Certified Food Protection Manager (CFPM) present during inspection. Please have a CFPM present during all operation hours. Sent handout with changes to the Food Code via email. A pattern of non-compliance for Priority violation # 21, 3-501.18 has been noted during this inspection. The person in charge has been signed up for an AMC training on Thursday, March 30 ,2023 at 8:45am. This establishment is not participating in the award program at this time and had 2 Priority, 0 Priority Foundation and 2 Core Violations on this inspection.
