Advised person in charge (PIC) that equipment which holds time/temperature control for safety (TCS) foods must be maintained in good repair to ensure foods are held at proper temperatures. PIC stated they will have the hot holding box weather stripping repaired as soon possible.

Advised person in charge (PIC) that areas shall be maintained in good repair so they are smooth and easily cleanable. PIC stated they will have the cove base tiles repaired as soon as possible.

Person in charge (PIC) stated they plan to replace the main dishwashing machine in the next few weeks. Advised PIC that they must submit for a remodel permit as soon as possible prior to performing any work in the kitchen.
