Observed refried beans at steam table at 120*F and refried beans on gas burner at 110*F. Hot hold of food to be 135*F or greater. As per the person in charge beans were cooked this morning at approximately 8:00 am. Refried beans had been prepared and placed at steam table. Both containers of beans were embargoed and discarded. Advised the person on charge that metal stem thermometers are to be used to verify food items remain above 135*F once cooked.

No County legal action will result from this inspection. Verbally discussed Notice of Inspection Rights with Jorge G . Emailed copy of inspection report to facility. Emailed copy of 72 hour notice with inspection. 2-102.12.(A) Certified Food Protection Manager. During site visit no staff on site with a Certified Food Protection Manager certificate. As of February 2022, all establishments must have a Certified Food Protection Manager on site during normal hours of operation. Core violation is a minor violation that relates to general maintenance and sanitation.
e.g. -No sign reminding employees to wash hands
Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control.
