Stopped employee. Reviewed events listed previously. Employee took off gloves, discarded tuna salad; washed hands for more than 20 seconds. Notified Person In Charge of the event.============This violation refers to employee hands being clean and washed when necessary. Employee not washing hands between working with raw food and RTE food. Employee not washing hands after engaging in other activities that may contaminate the hands. A pattern of non-compliance is developing for Priority violation # [21 ][ PRIORITY VIOLATION-3-501.18], which has been noted during this inspection. An Active Managerial Control Intervention Visit was offered to the person in charge. Failure to correct repeat violations may result in legal action. An audit of food employee certificates resulted in 22/22 food handler certificates in the establishment Reviewed and discussed date marking procedures used in the establishment.
