PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding. Observed in the open cooler in front of the kitchen ambient air temperature of 70F. Internal temperatures taken of TCS foods was 47F-57F. Manager removed and discarded all TCS food from this cooler. See Embargo form. Time/temperature control for safety food shall be maintained at 135F or above, or at 41F or less. Re-inspection scheduled for 2/18/20.
