PRIORITY VIOLATION-2-301.12, P: Cleaning Procedure---Kitchen employees were washing hands under 20 seconds. The person in charge (PIC)was notified of the issue and began educating kitchen employees. Provided stickers/handouts about how and when to wash hands to kitchen staff. The PIC stated the handwashing will be addressed in their next staff meeting. Please follow proper handwashing procedure by first wetting my hands, adding soap, scrub vigorously for 10-15 seconds, and then rinse hands in warm running water (minimum of 20 seconds for total procedure).

PRIORITY VIOLATION-3-301.11, P: Preventing Contamination from Hands; Bare Hand Contact with Ready to Eat Foods---A kitchen employee was cutting and handling oranges to be added to a drink in the kitchen area. The PIC was notified of the issue and sent employee to wash hands and put on gloves. The oranges were discarded at the time of inspection. Bare-hands contact with ready-to-eat foods in this establishment is not allowed. Please wear gloves when handling ready-to-eat foods.

Food items were held for more than 7 days without disposing. Person in charge discarded items at the time of inspection. Please ensure RTE/TCS food items are not kept for more than 7 days in the refrigerator after being opened/prepared/cut/cooked. Provided date marking sticker and handout.
