Dishes were being actively washed at time of inspection. High temperature records showed that the dish machine did not reach 160*F or higher earlier in the day. The dish machine can be switched to a low temp chemical dishwasher. Person in charge submitted a work order and the dishwasher was switched to low temp chemical sanitization with proper concentration of chlorine (between 50-100ppm). Please ensure that the final rinse temperature is 160*F or above when using high temperature to sanitize dishes.
