Notified PIC and the employee properly washed hands before new gloves were put on and employee returned to working with food items. Discussed with PIC the importance of employees being properly trained on when hands are the be properly washed to avoid contamination of food items and food contact surfaces.

For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4125/Food-SafetyOperator-Resources.---------------------------------- Observed 2 containers of shredded lettuce and a plate of sliced cheese being stored on the make line without any times set (sticker or on tablet) to indicate when the products are to be discarded. Notified PIC and the food items were voluntarily discarded (see embargo form) and new products were brought out and proper times were documented indicating proper discard times of the products. Discussed with PIC the importance of proper documentation of TCS food items that are using time as a public health control.
