PRIORITY VIOLATION-7-204.11, P: Sanitizers, Criteria-Chemicals --Observed a quaternary ammonia (quat) sanitizer level of over 400ppm via test strips in the deli departments 3 compartment sink. Per person in charge, the establishment has been using bagged sanitizer and pouring it themselves. This is because the sanitizer for their dispensers has been out of stock. Reviewed sanitizer requirements with the person in charge. Also developed a temporary procedure for using the bagged sanitizer and remade the solution. It is to be measured out each time and tested with the test strips whenever a new sanitizer is made to verify proper concentration.
