Employees shall clean their hands and exposed portions of arms after engaging in activities that contaminate the hands.

Observed employee to wash and rinse utensils but did not sanitize utensils as the last step of the ware washing process. Discussed with owner the correct procedure for washing dishes in the 3-compartment. Spent time educating owner and employees in washing and sanitizing process. Employee re-washed utensils including the sanitizing step before allowing utensils to air dry. Utensils and food-contact surfaces of equipment shall be sanitized before use and after cleaning.

Core-5-502.11, C: Frequency-Removal Observed several garbage bags and carboard boxes piled on the ground outside the backdoor. Discussed with owner the proper disposal of refuse. Employee removed garbage bags and boxes and discarded them in the dumpster. Refuse shall be removed from the premises at a frequency that will minimize the development of objectional odors or attract insects and rodents.
