Observed that the sandwich prep cooler next to prep table had an ambient temperature of 48-50*F using a minimum/maximum registering thermometer. Cold holding equipment must be able to keep cold foods at 41*F or lower. As per the manager, the refrigerator was reading cold in the morning. Advised manager to contact refrigeration company to fix. Also discussed using ice as an ice bath to keep items such as pico de gallo at 41*F or lower. A re-inspection visit will be completed on or before 7/23/2021.

Emailed copy of 72 hour notice with inspection. Provided charts to assist with monitoring cold hold temperatures of food in equipment. A re-inspection is scheduled for 7/23/2021.
