Observed onions in hot hold container next to sandwich prep refrigerator at 121-125*F. Hot hold of food to be 135*F or greater. Onions were discarded and new heated.

Observed small container of heated onion used as garnish at 121 - 125*F. Hot hold of food to be 135*F. Facility uses time as control for this item but had no documentation. As per manager items are used as garnish and only held for short periods of time. Onions must be marked with the discard time and record when removed form temperature control (hot hold of 135*F). Manager discarded onions, grilled more and documented discard time. Time as control for chilis and onions procedure provided to manager.
