According to an employee, there was no employee in charge in the kitchen or front of the restaurant, and a manager/person in charge would not be present for another 2 hours. All food service establishments must have a person in charge present at all times. Discussed delegating the responsibility with the person in charge.

Another stack of cartons filled with raw shelled eggs was stored directly on top of a pan of cut onions. A metal pan full of raw pork was stored on a shelf directly above a pan of cooked sausage. ALL raw animal products MUST be stored beneath ready to eat food items. Reviewed food storage guide with an employee. The Employee stated the items would be rearranged to prevent cross contamination.

PRIORITY VIOLATION-5-202.11 (A), P: Approved System -- The mop sink in the back of the restaurant had a spray nozzle connected downstream of the AVB. Attachments that create pressure may not be installed downstream of the AVB. Pressure downstream of the AVB can stress the AVB and ultimately break it. The PIC removed the nozzle. Core-5-205.15 (B), C: System Maintained in Good Repair; Maintained -- The handwashing sink by the cashier is clogged. All plumbing must be maintained in good repair. A nearby handwashing sink is available in the area. Please repair the handwashing sink.

Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control.
