Observed 3 bags of al pastor meat (51 - 53*F) and one bad of carne asada (50*F)in small two door counter height refrigerator across from take order window. As per manager food had been placed in unit for cold hold storage and had been in the refrigerator for more than 4 hours. Cold hold storage of food to be at 41*F or lower. Both the carne asada and al pastor meats were embargoed and discarded.

Observed that a two door counter height reach in refrigerator was only holding with an ambient temperature of 48*F with maximum/minimum registering thermometer. Cold hold equipment such as refrigerators must hold food at 41*F or lower. Manager is contacting refrigeration repair to fix unit. A re-inspection visit is scheduled for 7/12/2021. Manager will only keep non temperature control for safety foods in unit until fixed. All other food items were placed in reach in cooler throughout facility.

Core-6-501.112, C: Removing Dead or Trapped Birds, Insects, Rodents and other Pest Observed dead insects along back room used for storage beneath shelves. As per employee on site, pest control was on site about a week ago to treat store. Dead insects are to removed from site when found.

This establishment received a(n) B Grade and had 1 Priority, 1 Priority Foundation and 1 Core violations on this inspection. A pattern of non-compliance is developing for Priority violation # 20, [3-501.16(A)(2) and (B) Cold Hold], which has been noted during this inspection. An Active Managerial Control Intervention Visit was offered to the person in charge. Failure to correct repeat violations may result in legal action. No County legal action will result from this inspection. Verbally discussed Notice of Inspection Rights with Imelda E. Emailed copy of inspection report to facility. Emailed copy of 72 hour notice with inspection. A reinspection to verify corrective action with refrigerator is planned for 7.12.2021
