Observed rice (120*F) and jalapeno peppers (110*F) at steam table. Hot hold of foods are to be at 135*F or greater. Operator reheated jalapeno peppers to 165*F and held at 135*F. Rice was replaced with new rice that was heated in the microwave. Advised person in charge to periodically check hot foods to verify it is at 135*F or greater.
